Puddings anyone?

Hi all – have just had a fab recipe e-mailed to me from www.katiebulmer.com – I havent tried it yet but you can be sure it will be a ‘clean’ option.

Rhubarb and Ginger Crumble

Ingredients (Filling)

  • 450g rhubarb- chopped and trimmed
  • 1/2 pint of water
  • 1/2 teaspoon of ground ginger
  • 1 tablespoon agave nectar or honey
  • optional cinnamon

Ingredients (Topping)

  • 100g rolled oats
  • 40g desiccated coconut
  • 1 tablespoon agave nectar or honey

Method

  1. Preheat the oven to 200*
  2. Stew the rhubard in the water and add the ginger
  3. Once cooked stir in the agave nectar and transfer to an oven proof dish
  4. Spoon the topping mixture into the dish and cook for 20 minutes

 ENJOY!
